He can tell when things have been altered or thrown off - presumably if something doesn't "belong" in the world, if something or someone has been altered, or if generally her plan is not going well. Call it prayer-sense, call it spider-sense, it's a supernatural celestial heightened awareness that he has that extends to if something is off in her great plan. Things that are off are a pretty big spectrum of things. They can range from knowing who the antichrist is without having ever met the kid (Ep 6.) whereas Aziraphale and Crowley both got confused and lost him.
GABRIEL DOES NOT GET CONFUSED BY SUCH THINGS Normally in the case of MoM however, he's disconnected from her grace and that sense of arrogance that comes from knowing how everything works is only going to work 50% of the time. That means that upon sensing something might be up he'd go and charge in and defend it - and it'll either be a big nothingburger or actual danger in which case it's time for him to go full pikachu mode.
SOME EXAMPLES OF POTENTIAL SCENARIOS:
Hey Mr. can you help me find my Mom?: You are a small child who is lost. Gabriel is minding his own business when you, being a reasonable child, approach him and ask for help. I mean it's Jon Hamm he'd probably help you right? Hit up Random.Org and hit heads or tails for me.
Heads: Gabe is able to help you find your mom. Mom is overjoyed, Gabe does a good thing and you are under the impression that despite the grumpy asshole he's actually a good person.
Tails: Gabe picks the wrong person, you are suddenly in a dangerous situation. He has to defend you. Ultimately the both of you may have to be saved and you are forced to confront the very confused adult who has no fucking idea how he managed to screw up something so simple.
I am being attacked - they went that way! Gabe is your personal plot device. Do you need somebody to fuck up your character's day/save your character but possibly make an enemy? He is here for YOUR needs. Essentially you need help, decide if he succeeds or fails in actually helping your character specifically. The other character, the situation, that's up to them, but he's your character's personal "Good or bad thing". Either he saves you (and ears the ire of your character's enemy.) or he fails (and has to deal with failing your character AND possibly making them+himself an enemy.)
This thing is a wrong thing. So he can tell when things have gone wrong in the "plan" or things are screwed up. I'll roll heads or tails for this (heads, he guesses, tails, he doesn't) but generally I'll approach you and ask if he can use his "spider-sense" on. Use this post to tell me if - yes, he sees it as per your plot needs+no, he doesn't but can make a mess of himself anyway. Good way to keep him out of casts or your CR in an IC sort of way.
